Comment: "I actually used "Marie" with "milk biscuits" in parentheses so there would be no doubt."

crushed milk biscuits

I don't know what market you are working for obviously but in the UK these biscuits are known as "rich tea". Maria is a Portuguese term that people, at least in the UK would not uinderstand

Amy,
I lived in the Uk until I was 24 and have lived in Portugal since. What is most important in the recipe is the texture and absorvancy of the biscuits and so for that reason I would personally opt for Rich Tea. I also work here in Porrtugal as a food writer and often have problems with food items that do not exist in different markets. I do not remember ever seeing Marie biscuits in the UK but that may just be my fading memory :-) Also you may want to add a note about a few drops of vanilla essence for the true Portuguese flavour...

Note from asker:
Hi Douglas...this is for the UK market. I've found a number of UK sites referring to "Marie biscuits" - do you think people in the UK would generally be familiar with that name? I know they're different from rich tea biscuits because they have vanilla in them. |
