The outer fat of lamb has a thin, papery covering called the fell. Some cooks like to remove the fell, claiming it adds a strong flavor. However, it does help in holding the shape of the leg together while roasting, as well as retention of juices and flavor. On larger cuts, I haven't noticed enough difference in flavor to warrant the extra work. On small cuts, you may wish to remove the fell before cooking.

The shoulders and leg joints may also still have the musk glands attached, if not removed by your butcher. These are large yellowish pieces that you might find unsightly. They are called musk glands because it was formerly thought they gave a musky off-flavor to the meat. This has been proved untrue, but you may wish to remove them for the sake of aesthetics. Most butchers removed the musk glands before marketing.

In a "lamb" no But in a mature animal yes. hence the expression, "You smell like a Billy Goat's Crotch" (I am including both sheep and goats in Caprinae) but as sure as sh*t English butchers have a coloquial name for it!

It's not suet. Which can be used for cooking (suet pudding etc.) Bedum pudding might not go down that well :-)

Ao preparar a perna de cabrito, é necessário extrair-se uma glândula a que vulgarmente chamamos de bedum e que fica junto ao osso, um pouco abaixo de meio da perna, faz-se uma incisão com uma faca e retira-se o bedum com os dedos, querendo nesse sitio pode-se por no seu um ramo de cheiros.

Cut out the stink gland and cook the meat a long time and it's almost passable. I've heard the story that there's a group around Overton.

I've read that there's a stink gland that needs to be removed but couldn't find much info ... The gland I think you are thinking of is in a leg of lamb.
