split the hide

You could use 'open,' but I think 'split' sounds better. Any butchers out there?
Example sentence:

Next, split the hide from the opening in front of the brisket down the midline of the belly to the bung.

his gutting knife is used to cut open the hide (skin) at the belly of the animal and to slit open the belly skin as far as the thorax.
