La cangianza, in gemmologia, corrisponde all'inglese "iridescence": the quality or state of being iridescent, that is varying in color when seen in different lights or from different angles. Penso sia più appropriato di "changeable". Perciò ti suggerisco di adattare la frase di conseguenza.

cangiare means cambiare,mutare, specificamente riferito ai colori. If sth is 'cangiante' it means 'che cambia di colore con il variare dell'incidenza della luce' (Devoto-Oli Le Monnier Italian Dictionary). I don't know if there's a specific word in English as the Italian 'cangiare', general E dictionary just give 'change', maybe you could render the meaning adding sth like 'changes colour' or finer ' changes nuance' - not an expert in colour then, maybe you can do better than me for that part, but i hope i was of some help.
