disagree Alexander Demyanov : I believe 'bite' here refers to taste, not to "bite resistance".

4 KudoZ points awarded for this answer. Comment: "Thanks for your version, which seems to be more appropriate as the term quite often refers not only to spicy product but to all kind of bakery. Although, I still can not find an appropriate Russian word to express this quality in gastronomic terms. "

just the meaning

In this context, "bite" refers to the product spiciness, or distinct nuances of taste, not to how easy or hard it is to bite.

I would suggest "ostrotA", except in Russian we usually talk of something being more "ostryj" or less "ostryj", and not distinct spicy tastes.
