strozzamento/restringimento
Non so se ho capito bene ma sembrerebbe che l'olio comprima la fase acquosa restringendone la sezione fino a produrre le goccioline. Il termine strozzamento è la traduzione di pinch-off in elettronica dei transistori… non so se in questo campo è usato lo stesso traducente.
