Book-keeping for income received from overseas clients/agencies

I want to know a few things:
1. If I work with overseas agencies, do I need any particular documents for overseas income? 2. Since Paypal is the main channel for me to receive my pay, can the transaction record of Paypal be counted as the official bookkeeping document? 3. How do we convert our money back to GBP? Normally I will wait until a certain amount of pay is accumulated on Paypal and use their converter to convert to the currency that I need before I transfer that... See more

My French accountant (I'm based in France) says that the Paypal transaction record/date is what counts if you do cash accounting, which most freelancers do (as opposed to accrual accounting).
