I would ask the owner how he wants his menu translated. Most classy restaurants have a short and catchy name for each entree, and then has an explanation of the ingredients and cooking method of the entree.
IMHO to cram all the cooking info into a name is not appetizing. ;-)

: should "Chicken" here be "organic chilken"? 家乡说土鸡,是那种不喂任何催肥化学药品,只吃粮食和满地乱跑吃小虫长大的鸡。这种鸡没有多少肉,但是特别香又养人。家乡人称其他鸡为肉鸡,也就是我们随处都可以买到的。

Thanks, Joyce. Nigel is right about 土鸡 being free range chicken. IMHO it doesn't have to be right in the name of the entree though. For example, I've never heard an entree called pig intestines, even if it is. ;-)
